Ancient Buckwheat for modern times

Buckwheat is often classified among cereals, although it belongs to the polygonaceae family, related to sorrel and rhubarb. We use it in the cuisine in the same way as other cereals. The buckwheat plant is 15 to 60 cm high, with reddish stems, heart-shaped leaves and short stalks. The flowers are white or reddish in the shape of the small inflorescence. It comes from Central Asia. It is a very nutritious food that is gluten-free and, thus, also suitable for people with coeliac disease.

5 reasons for selecting buckwheat

1. Distinctive noble flavour

of an ancient foodstuff that combines perfectly with other foodstuffs in modern cuisine.

2. Rich nutritional value

It is rich in fibres, proteins, manganese, magnesium and flavonoids, which act as antioxidants.

3. A speciality of Slovene national cuisine

Buckwheat is written in capital letters in Slovene cuisine. Buckwheat flour can be used to prepare numerous Slovene dishes, such as buckwheat mush, rolled dumplings and bread. The buckwheat kasha is also very well known. More modern products combine buckwheat and other cereals or other mainly vegetable ingredients – e.g. dry and fresh pasta, flour or grain mill products.

4. Highly flexible foodstuff in cuisine

It can be prepared in different shapes, in different ways, cooked or baked, as a side dish, salad, “risotto” or a sweet dish. It is also distinguished by a short cooking time. Well-known chefs like to combine the special taste of buckwheat with other ingredients and create interesting and light modern dishes.

5. Beneficial effects on well-being and health

The herb and fruit of the common buckwheat are used for curative purposes.
