Ancient Buckwheat for modern times

Buckwheat is often classified among cereals, although it belongs to the polygonaceae family, related to sorrel and rhubarb. We use it in the cuisine in the same way as other cereals. The buckwheat plant is 15 to 60 cm high, with reddish stems, heart-shaped leaves and short stalks. The flowers are white or reddish in the shape of the small inflorescence. It comes from Central Asia. It is a very nutritious food that is gluten-free and, thus, also suitable for people with coeliac disease.
